That’s one of my favorite comfort foods, and when I’m feeling low on time, I really want to make it. And, it’s not always practical to run out and run to the store. Especially, in these days of extreme energy conservation.

So, if you are like me, you like to find ways to spruce up a meal that might not otherwise have much flavor. The classic baked potato soup recipe called for heavy cream and large chunks of potatoes; however, today’s soup recipes can be healthier by utilizing smaller chunks of potatoes, coupled with mild cream instead of heavy cream, and even using skim milk or reduced-fat milk instead of whole milk. The difference in this soup is noticeable. The cream has a much different taste, and it gives the potatoes a much smoother consistency that makes for a wonderful change from the heavy soups of yesterday.

Instead of using sour cream, many of today’s baked potato soup recipes use yogurt. For some people, this is a nice choice, and it does help to cut down on fat. However, if you are one of those people who like their sour cream to be very heavy, then this may not be the best choice for you. For those who have a difficult time digesting yogurt, it may be a good idea to also use reduced-fat or skim milk instead of whole milk in your baked potato soup recipes. You can also add some nutritional yeast to the mix, which will further improve the quality and texture of your dish.

If you like your baked potato soup with a thick cream base, then you may want to also consider using heavy cream as well. However, if you feel that this makes your baked potato soup too heavy, then you can always consider reducing the cream in your recipe. You can also add the yogurt and sour cream at the same time, or mix them up in small increments until you find the consistency that you want. This is an easy instant pot potato soup fix that will quickly put you on the road to enjoying all of the healthy benefits of this great soup.
